Polenta


How about something savoury and delightful today? I think this delish Polenta will do...



Ingredients
4 cups water
1 cup cornmeal
1/4 cup carrots (chopped)
1/4 cup string beans(chopped)
2 tbsp butter
2 tbs sugar
Pinch of salt
4 tbs scallion (chopped)
3 cloves garlic (chopped)
2 tbs thyme leaves

Method
In a large pot, bring water and salt to a boil. While whisking, pour cornmeal slowly into the the boiling water- making sure there are no lumps. Let cook for about 2 minutes. Then add the remaining ingredients and combine properly. Cover and let cook for about 30 minutes on very low heat. Stir when necessary.You may have to adjust the cooking time depending on the texture of the cornmeal. The polenta is ready when it becomes smooth, thick and creamy.

You may serve while it is warm. Or put it in a square/rectangular container to cool and set. Then slice and deep fry.

    Je fais très souvent de la polenta pour accompagner mes viandes en sauce ou simplement en confectionnant un plat d'aubergine/tomate et polenta.

  11. I often eat polenta in winter. It's hot and it goes well with a hot or cold dish of some kind; for example , I like polenta with a dish of green beans made with garlic and topped with sour cream or yoghort, or polenta with a slice of fried fish. I use mainly water and cornflour in the polenta preparation (for dietary reasons - no butter or sugar).
    Your polenta looks gorgeous!
