Lentil Empanada

Here is a little savoury treat for you! Lentil Empanada with Irish potatoes in the mix! The crust is so easy- only three (3) ingredients! Well... That is if we don't count the salt☺♥♥♥


The Crust
3 cups flour
1 cup oil
Salt to taste
1/2 cup water (chilled)

Lentil Filling
2 cups lentil (boiled)
1/2 cup Irish potato (boiled and chopped finely)
3 tbs scallion (chopped)
3 tbs garlic    (grated)
1/2 tsp cayenne pepper
Salt to taste


The Filling: In a bowl, combine all ingredients and make sure to mix well.

The Crust: In a bowl, combine flour and salt. In a separate container, combine oil and water. Sparingly add the liquid mixture to dry mixture and mix well to form dough. Make some balls from the dough. Then roll dough between wax paper and cut 6 inch circles out. Spoon lentil mixture onto dough. Then cover with another circular piece of dough. Press edges with a fork making sure to seal properly. Bake at 425 degrees Fahrenheit for 20- 30 minutes. Or until crust is golden brown.
