Rustic Veggie Galette

This is an old recipe of mine. It is one that I really like, because it has a crust and is also savoury. I love crusty pastry♥ 

The Crust
3 cups flour
Pinch of salt 
1 cup oil
9 tbs water

The Filling
1 large tomato 
1 large onion 
1 dz green beans/string beans
1 large carrot (sliced vertically)
4 tbs chopped scallion 
4 tbs chopped garlic 
1/2 tsp pepper
Salt to taste

The Crust: In a bowl, add flour and salt, and combine properly. Mix water and oil in a separate container. Then sparingly add the liquid mixture to the dry ingredients. Mix and clump together to form dough. Roll the dough between two pieces of grease paper with rolling pin. Then cut dough in a large square or circle.

The Filling: Saute scallion, garlic and pepper.  Then spread some of the sauteed spices over the flattened dough, and sprinkle with salt. Leave at least 2 inches of dough for folding. Decoratively place tomato, onion, beans and carrot. Use the remaining sauteed spices to spread over the veggies. 

Fold over the edges of the dough, and bake at 350 degrees Fahrenheit for 30- 45 minutes, or until crust is golden brown.
