Tomato Pouches

Here is a fun and delish way to have tomatoes♥

The Crust
3 cups flour
Pinch of salt 
1 cup oil
9 tbs water

The Filling
8 large tomatoes (sliced)
4 tbs scallion (chopped)
4 tbs garlic (chopped)
1 tsp pepper (chopped)
4 tbs thyme leaves
Salt to taste

The Crust: In a bowl, add flour and salt, and combine properly. Mix water and oil in a separate container. Then sparingly add the liquid mixture to the dry ingredients. Mix and clump together to form dough. Roll the dough between two pieces of grease paper with rolling pin. Then cut dough into medium sized circles.

The Filling: In a pot on low heat, saute tomatoes, scallion, thyme leaves, garlic and pepper. Sprinkle salt, and combine properly. Spoon the sauteed veggies onto half of each circle of dough. Leave at least 1/2 inch of dough  at the edges for sealing. Fold the empty half of the dough circle over the other half covered with veggies. Use a fork to to crimp the edges of dough and seal properly. Bake at 350 degrees Fahrenheit for 30- 45 minutes, or until crust is golden brown.

  3. This sounds delicious! Thank you for sharing the recipe...but.....I cook all of the time and have never heard of "grease paper" what is it?

  4. These would be great to pack for lunch, instead of sandwiches. One of my favorite recipes is tomato pie. This sounds similar, but easy to pack.
